Creating Cakes That Taste As Decadent As They Look!

Cake should indulge both the eye and the palate. We see no point in a cake that is visually appealing but tastes, well, icky. Erica O'Brien Cake Design creates client-driven, one-of-a-kind designs that taste as decadent as they look. Our commitment to exceptional taste and quality, organic ingredients, and real butter make a distinct difference. Our clients tell us our cake is the best they've ever tasted. Erica O'Brien combines her lifelong love of baking with her design savvy in every cake she creates. Erica hails from New York City where she trained at the Institute for Culinary Education. She relocated to Long Beach in 2005.

Tastings
Our tastings are by appointment at our studio in downtown Long Beach and are complimentary. And here's the best part: we bake everything you request fresh for your tasting, so you'll know exactly how your cake will taste on the day of your event. At your tasting, you can sample up to three cake flavors and five fillings. Tastings usually take about an hour, and appointments do fill up quickly. Keep in mind that if you are late for your scheduled appointment, we'll have less time to spend with you, so please be on time. A Visa or MasterCard is required to secure your appointment. If you need to reschedule, please notify us at least 48 hours in advance. If you miss your scheduled appointment and don't notify us at least 48 hours in advance, your card will be charged $25.

The design process
Design doesn't just happen. Designs are conceptualized, created, and perfected. Whether you have a clear vision or just a vague idea for your cake, we work collaboratively with you to discover the designer you have within. We'll help you determine the look and feel of your cake. The inspiration for your cake can come from anywhere: a family heirloom, an invitation, a china pattern, a postcard. After your consultation, we will have a clear idea of your design concept, and will get to work on a sketch of your cake. Then we tweak the sketch until it is the exact cake you want. We want you to love your cake design!

Organic cakes
Organically grown food is better for your body and your planet. Our organic cakes are made using organic ingredients with a focus on those locally produced. (You might even spot us at the farmers market buying organic eggs!) Our organic cakes begin at $10 per serving.

Pricing
Cakes begin at $7 per serving and increase depending on the complexity of the design and the time required for your cake. Most of our clients choose designs between $8 and $10 per serving. We have a $300 minimum. Delivery within Long Beach is included in the price. Outside of Long Beach, there is a delivery fee based on time and mileage. We do not ship our cakes at this time.

Ordering
It is important to us that your cake be exactly what you want. Therefore, we limit the number of orders we accept so that we can give each cake the attention it deserves. Our calender gets filled quickly, especially May through September. We recommend that you order with us as soon as you've secured the date for your venue. Otherwise, we can not guarantee that the date of your event will be available. A 50% deposit is required to hold your date.

Fondant
Many people ask us about fondant. Fondant was originally used to cover fruitcakes that were shipped from England to the New World and has been used in Europe and Australia for centuries. Fondant recently gained popularity in the U.S. because of its incomparably smooth finish. Fondant is an edible sugar paste made of powdered sugar, gelatin, glucose, glycerin, and water, and is used only as an icing (not a filling). Some people like it, and some don't. Because fondant firms up, it is easy to handle, and we find that guests who don't like fondant will simply peel it off. Also, because of the way wedding cakes are cut, guests only get a small amount of fondant with their cake. We always provide a complimentary fondant sample at your tasting. We prefer to cover cakes in fondant both for aesthetic reasons and because it helps keep the cake fresh. However, we will cover a cake with buttercream if you request it.
